PANEER BHURJI


This is a quick and easy dish. Same as egg bhurji (egg scrambled). A very tasty side dish for bread, roti, and dosas.


INGREDIENTS:


1. Paneer (Indian cottage cheese) – 1 cup cubed.

2. Onion – 1 medium-sized chopped.

3. Tomato – 1 medium-sized chopped.

4. Aniseed (sombu/saunf) – 1/2 tbsp.

5. Green chillies – 2 chopped.

6. Turmeric powder – 1/2 tsp.

7. Garlic – 1 pod chopped.

8. Garam masala powder – 1/2 tsp.

9. Coriander – 2 sprig chopped.

10. Salt to taste.

11. Oil – 1/2 tbsp.


METHOD:


Heat oil in a pan, add aniseed, once it splutters, add onion and sauté it. Then add chopped garlic and sauté it. Then add the chopped tomato, green chillies, turmeric powder, garam masala powder, salt and 2 tbsp of water and cook for 2 mins. Now add paneer, mix well, just crumble it and cook for 3 mins until the paneer blends with the masala. Garnish with coriander.


Serve hot with bread, roti, paratha or dosa.
