This is a healthy protein-rich dish. It is called Lobia in Hindi, Karamani in Tamil, and Alasandalu in Telugu.
INGREDIENTS:
1. Black eye beans -- 1 cup
2. Cumin seeds – 1/2 tsp.
3. Onion -- 1 chopped.
4. Tomato -- 1 chopped.
6. Ginger-garlic paste -- 1/2 tsp.
7. Turmeric powder -- 1/2 tsp.
8. Red chilli powder – 1 tbsp.
9. Coriander/dhania powder – 1 tbsp.
10. Whole garam masala.
11. Coriander – 1 sprig.
12. Salt to taste.
13. Oil – 1 tbsp.
METHOD:
Wash and soak the beans for 5 hrs and then pressure cook it. Heat 1 tbsp of oil in a pan, add whole garam masala and then add cumin seeds. Once cumin seeds splutter, add onion and saute till it becomes tender, then add ginger-garlic paste, chopped tomato and sauté it. Now add turmeric, red chilli powder, coriander powder, salt and add 2 tbsp of water and mix well and cook until the raw flavor of the powders are gone. Now add cooked beans and add some more water and allow it to boil. Now check the salt and add some chopped coriander.
Serve hot with rotis or rice.
