SWEET APPAM


This is a sweet dish and originally from Kerala state.

INGREDIENTS:

1. Maida -- 1 cup.
2. Rice flour -- 2 tbsp.
3. Cardamom -- 4.
4. Powdered jaggery - 1/2 cup.
5. Ripe banana – 1.
6. Ghee/oil for deep frying.

METHOD:

1. Dissolve jaggery in 1/4 cup of water for 10 minutes and filter out to remove impurities, if any.
2. Add this to maida, rice flour, mashed banana and cardamom, and mix into a smooth batter (add some water if necessary to make it to an idli batter consistency).
3. Heat up the ghee/oil in a pan. When it is hot, reduce the flame to medium and add about one spoonful of the batter and deep fry it. Turn over and fry until both sides are brown in color. Drain the excess oil with a paper towel.
